Have you ever had one of those days where you just don't want to do anything, your sick and would rather be in bed? I am sure we have all felt that way at one point of another. For myself the day does not stop whether I am sick or just over tired, I still have to get up, get dressed, change diapers, dress children, make breakfast (when my darling hubby is to busy to) do laundry...lots and lots of laundry and get all the children started in their daily lessons. Some days I just don't want to make a big meal, I just don't have the energy so I make this simple soup and it not only keeps our growing children happy it helps with colds too! All you need is water, homemade broth or bullion, a large onion, flour, eggs and salt! In a large stock pot put 2 parts water to 1 part broth, add chopped onion and let boil. If you like throw in some fresh veggies! Now take 2 cups flour, 1/2 cup water, 1/2 tsp salt and 4 eggs in a medium mixing bowl and beat well to form a nice batter. Drop batter into boiling soup 1/2 tsp at a time, let simmer 5 minutes before removing from heat and serve.
