Cranberry Bars

Perfect for the holidays or just a nice treat.  These Cranberry Bars take about 45 minutes to prepare, but are well worth it.
You will need:

Filling
1 - 340 g bag of Cranberries
1/2 cup of white sugar


Crumb Mixture
2 Cups rolled oats
1 cup sugar
1 cup coconut shredded
1 1/2 tsp baking soda
4 Tbsp milk
1 1/2 cups all purpose flour


Filling:  In a medium saucepan place cranberries and stir on medium heat, add 1/2 cup sugar gradually.  Continue to stir until you get a nice jam like filling (about 30 minutes).  Remove from heat.
Crumb Mixture:  In a large mixing bowl place all ingredients in above order and use hands or a fork to mix.

Place 2/3 of crumb mixture into glass baking dish, pour and spread cranberry filling evenly over mixture.  Take remaining crumb mixture and sprinkle over top.  Bake in pre-heated oven at 350 F for 25-30 minutes.  Remove from oven and let cool completely before slicing into bars.
