Place clementine and pineapples into food processor and blend. Over a large mixing bowl put mixture through sieve. Add mashed banana, egg, vanilla, sugar, cream, coconut and butter into bowl and stir well. In a small bowl combine flour, baking powder and soda. Stir flour mixture into fruit mixture until well blended. Pour batter into greased muffin tins and bake at 400 F for 5 minutes, reducing heat to 375 F and continue baking for 20 minutes. Remove from oven and let sit 5 minutes before transferring to cooling rack.
