Oven English Muffins

  • 1 cup milk
  • 2 tablespoons sugar
  • 1 tsp salt
  • 2 1/4 tsp yeast
  • 1 cup warm water
  • 1/4 cup lard
  • 6 cups flour
In a small sauce pan warm milk and lard. In a large mixing bowl combine yeast and warm water let sit 20 minutes. When milk is just about to come to boil remove from heat stir in salt and sugar and let sit till cool.  Place cooled milk mixture into yeast mixture and stir in 3 cups sifted flour until smooth.  Add rest of flour to make a soft dough, knead and place in greased bowl.  Let sit for 1 hour, then punch down and pull off pieces the size of walnuts, roll into balls and flatten on greased or non-stick baking sheet. Let rise for 25-40 minutes, then place in pre-heated oven at 325F and bake for 8 minutes flip muffins and bake for another 7 minutes and then flip again for 2 minutes just to get an even golden brown on each side. Enjoy!
Makes 12-18 depending on size of muffins.
