Sunflower and Basil Bread

You'll Need:
  • 2 cups milk scalded
  • 2 cups water cold
  • 6 tbsp sugar
  • 4 tsp salt
  • 4 1/2 tsp dry active yeast & 1/2 cup warm water
  • 1/4 cup melted lard
  • 1 cup chopped fresh Basil
  • 1 1/4 cup sunflower seeds
  • 10 cups sifted flour
Scalded milk in saucepan. In a small bowl mix yeast, 1/2 cup warm water and 2 tbsp sugar, let sit for 20 minutes. When milk is ready pour into large mixing bowl, add remaining sugar and salt while stirring.  Mix in cold water and 4 cups of sifted flour to make mixture spongy.  Add melted lard and yeast mix to mixture and stir in Basil and sunflower seeds. Now add in remaining flour, once you have a rubber like dough place it on board knead and then transfer to oiled bowl.  Let rise for 2 hours, then knead out on greased board, cut dough into four equal parts and place in greased bread pans.  Let rise for 1 hour and place in oven at 375F for 1 hour.
