Sunshine muffins

Its dandelion season and I have been trying to add dandelions to our meals. Today I whipped up a batch of what I call sunshine muffins and they were kid approved as well as husband approved so I thought I would share my recipe with you. The recipe make 36-40 regular sized muffins.
Sunshine muffins
9 bananas mashed
The zest of 2 oranges
20 dandelion flowers (just the yellow petals no green)
1lb of strawberries chopped
1 cup shredded carrot
3 eggs
3/4 cup soft butter
1 cup honey ( can replace with white sugar)
3 tsp baking soda
1/2 tsp salt
5 cups all purpose flour or 4 1/2 cups whole wheat flour

Mix all ingredients in a large bowl and place in greased muffin pans. Bake at 400 F for 20 minutes. 😊
